THE FRUIT: Biodynamic Sangiovese grapes are hand-picked, fermented on skins with the inclusion of whole bunches in open wooden vats. The pressed wine then goes through a wild malolactic fermentation and long aging in French barriques. The wine is fermented to 14.5% alcohol.

BOTANICALS: This craft, small batch red vermouth has small and exacting measures of local and imported botanicals, the most influential on the style being the woodier spices of cinnamon, wormwood, angelica, gentian, bay leaf, cinchona with small amounts of robusta coffee and seville orange.
The botanicals are macerated separately in the fortifying spirit (a distillate of the mother wine) and the blended aromatic spirit is then used to fortify the mother wine to 18% alcohol. The resulting vermouth is racked, coarse filtered and bottled with only a minimal amount of sulphur.
